Damian Wawrzyniak Wraps up Consulting Contract with Crocker’s Folly

After a wildly successful winter Damian Wawrzyniak’s exclusive consulting contract with Crocker’s Folly is drawing to a close. Since August 2014 the culinary craftsman has held the position of Chef Consultant at the five star London establishment. During this time he achieved an array of feats which saw Crocker’s Folly quickly emerge as one of the capital’s most coveted dining destinations.

One of Wawrzyniak’s major marks was the design of the entire kitchen space. This includes the creation and implementation of a custom built ageing unit capable of maturing meat for a limitless period of time.

After conceiving the kitchen Wawrzyniak lent his expertise to the creation of signature dishes. These include the pioneering of the restaurant’s famous Cured Beef Tartar with 68 C egg yolk, insistence on a curated meat selection as well as a series of recipes for prestigious publications such as Olive Magazine.

The Michelin experienced chef was also involved in the staff employment phase which saw Crocker’s Folly hire a team of Executive, Head and Pastry Chefs. This includes the recruitment of Pierre Simonin a creative culinary prodigy who is currently running Crocker’s Folly with great success. Wawrzyniak oversaw the training of the entire kitchen brigade as well as personally coached FOH staff to achieve the best possible standards.

While Wawrzyniak’s consulting contract has officially ended he will still continue to visit the establishment and offer expert advice as and when required. He will also maintain involvement in VIP bookings and private parties, roles which include live turkey carvings and the creation of special menus. The chef will now transfer his expertise to Maroush Beachump Place, where new kitchen and equipment using less energy consumption will be installed to produce maximum efficiency for the whole operation.

Wawrzyniak said, “It’s been an incredible journey and while I’m reluctant to leave I’m also confident that Crocker’s Folly will continue to uphold its status as one of London’s most popular restaurants.”

Housed in a Grade II listed former Victorian gin palace, Crocker’s Folly has given Londoners a chance to relive the glamour and exclusivity of one of the capital’s most magnificent buildings.
