Loch Fyne Oysters Ltd, Scotland’s leading seafood producer, has won the New Product Award for its Citrus and Black Pepper Infused Scottish Smoked Salmon at the Williamson Foodservice Highlands & Islands Food & Drink Awards. Utilising only the finest ingredients, with unique smoking, curing and filleting methods, the salmon is hand rinsed in fresh highland spring water before it is delicately smoked for ten hours using oak wood shavings from retired whisky casks to add smoky overtones.
