Alto-Shaam Combitherm Combi Ovens from FEM offer a smoker option
Smoking or non-smoking? Now there’s a choice
Combi-ovens are versatile pieces of cooking equipment with which chefs can bake, steam, roast and poach. Now their use has been extended further with the introduction of Alto Shaam’s Combitherm smokers, available from Foodservice Equipment Marketing (FEM).
With the Combitherm smoker chefs can either hot or cold smoke a product, with authentic wood smoke, then switch back to conventional combi oven cooking when required. This is perfect for those who like to have precise control over the depth of smoking of their hams, bacon, sausage, game, poultry, fish, cheese, etc., but don’t have the space for a separate smoker oven. After smoking, a single cleaning cycle removes all smoke residue from the oven so it can be used as a conventional combi-oven with no transfer of flavour.
Another feature, the Gold-n-Brown setting, gives six precise browning levels to finish food and get an attractive gratinated finish.
New graphic-based controls on the Combitherm access pre-programmed recipes at a touch, or they can be used manually for more advanced cooking. For ease of use the automatic humidity feature has digital instructions in multiple languages. An optional programmable control has the memory capabilities for up to 250 cooking cycles – each with up to 20 cooking steps.
A patented, automatic system vents all the steam from the combi-oven compartment immediately before cooking time expires, to protect the operator when they open the door. The two-speed reversing fan, motor brake and venting system balance water and power consumption for economical cooking, while the CombiClean technology uses scrubbing jets of water to automatically clean the oven.
