The Dallas firm focuses on functional designs for shops, eateries and entertainment venues

DALLAS, TEXAS (May 1, 2012) -- For a small restaurant like Chef Avner Samuel’s and Chef Jon Stevens's Nosh Euro Bistro in Highland Park to succeed in a troubled economy is notable; for it to expand into a second location in Plano after barely a year in business is amazing. Nosh owes its success in part to prestigious Dallas-based firm Insight Consulting & Design, which also currently designing another restaurant for the pair of chefs launching next week.

In 2007 he correctly predicted that standalone restaurants would begin to shrink down to a 3,000 to 4,000 square foot range before major restaurant firms like Brinker International and Darden began doing just that. He also predicted that fine dining eateries would become a more casual atmosphere. In keeping with this prediction, Insight specializes in small concept restaurants, guiding many to success beyond their expectations.

Russo is a third-generation builder, making his son and partner Joe Russo the fourth generation of the family to go into a construction-related field. Joe Russo is steadily starting to match his father's superb track record, working with clients such as Dallas' American Airlines Center entertainment venue, Pier 1 Imports’ Fort Worth headquarters, and a variety of new restaurants.
