The symposium Nutrition and allergy gathers world-renowned scientists and will provide the latest research in the area, from novel insights in infant immune development to overviews regarding possible connections between the allergy epidemics and the way infants are being fed today.

Allergy is the major chronic disease of children and adolescents in Western countries today. The allergy epidemic is also spreading globally in parallel with economic development and improved sanitary conditions. Allergy is the result of faulty regulation of the immune system instead of developing tolerance to harmless components that we eat and inhale every day, it launches an attack on these innocuous substances. In this respect, allergy is akin to other immune dysregulation diseases, such as autoimmunity and inflammatory bowel disease, which are also on the increase in countries with the modern Western lifestyle.

Are the current ways that we feed our babies part of the problem? Has the urge to avoid potential allergens led us into a situation where the immune system is deprived of stimuli and cannot develop tolerance? How does early nutrition influence development of the infant's immune system? What is the role of polyunsaturated fatty acids in early programming of the immune system? How and when should the infant be weaned in order to minimize the risk of allergy development? Can the immune system be safely stimulated by giving probiotics to infants and young children?
