Raw Foods Offer Benefits, Say Two Health Experts

Several pieces of fruit and a large vegetable salad should always be included in your daily food selections.

Before our ancestors mastered fire, our food was almost always eaten raw—and that was a good thing, according to two boomer generation health experts.  “Although we don’t advocate a totally raw food diet as a matter of preference, including plenty of raw foods in your diet will have many health benefits,” say Dian Griesel, Ph.D., and Tom Griesel, authors of the new book TurboCharged: Accelerate Your Fat Burning Metabolism, Get Lean Fast and Leave Diet and Exercise Rules in the Dust (April 2011, BSH).

“Unheated proteins and fats are most readily absorbed by our bodies,” say the Griesels.  “Heat often deranges them making them toxic in some cases.  Many vitamins and minerals are destroyed by heat.  These are good reasons to include an adequate supply of raw foods in your diet.”

“Fresh fruits and vegetables are suitable for everyone and are the obvious choices,” adds Tom.  “Variety in color is a good guideline.  Think ‘rainbow’ when making your purchases in the produce department and when preparing salads.  Several pieces of fruit and a large vegetable salad should always be included in your daily food selections. Raw nuts and seeds are another choice everyone can take advantage of.  They are a rich source of vitamins, minerals and healthy fats.”

“Sushi is another option for those who enjoy it,” adds Dian.  “If you can’t get past the thought of eating raw fish, ceviche made with fresh lemon or lime juice is a wonderful option, particularly when served with a dose of fresh chopped onions, cilantro, red pepper, jalapeno pepper, tomato and cucumber.”

Many enjoy raw organic eggs, add the Griesels, particularly when they are included in smoothies or fresh made eggnog, and quality meats can be enjoyed as tartare or carpaccio.

“Variety is the spice of life, and including more raw foods in your diet will expand your culinary horizons as well as improve your health,” say the Griesels.
