Emmi Roth USA Supports Share Our Strength at Taste of the Nation

Emmi Roth USA, a leading provider of specialty cheeses and premium fresh dairy products, is proud to announce its sponsorship of Share Our Strength’s Taste of the Nation® events in conjunction with its support of Share Our Strength’s No Kid Hungry® campaign as part of the brand’s commitment to ending hunger in America.

From coast to coast, Emmi is supporting four Taste of the Nation events, which bring together chefs from across the country to raise money for the No Kid Hungry campaign. The No Kid Hungry campaign is ending childhood hunger in America by ensuring all children get the healthy food they need, every day. By connecting kids in need to effective nutrition programs like school breakfast and summer meals, and teaching their families how to cook healthy, affordable meals through its Cooking Matters program, the No Kid Hungry campaign surrounds children with healthy food where they live, learn and play. Since 1988, Taste of the Nation has raised more than $82.5 million.

Emmi’s involvement in Taste of the Nation kicked off in San Francisco on March 21st, where Corporate Chef Evan Topel served up tempting fare featuring Emmi’s premium specialty cheeses, Kaltbach™ Cave-aged Le Gruyère® Switzerland AOC and Le Gruyère® AOC. Emmi experts were also on hand to offer insight and tips for cooking with specialty cheeses. Chef Topel and the Emmi team will reprise their participation in Taste of the Nation events in New York on April 29, Los Angeles on June 9 and Chicago on August 7.

Those who can’t make it to one of the Taste of the Nation events can still enjoy one of Chef Topel’s specialties by making his Truffle Mac and Cheese with Kaltbach Le Gruyère® at home following his own recipe.

KaltbachCave-aged Le Gruyère® & Truffle Mac ‘n Cheese

Yield: 6 – 8 oz. entrees

12 – 4 oz. side servings

Ingredients:

½ lb Trottole or Orecchietti Pasta

1 cup Casa Solana White Cheese Sauce

1 ½ cups Emmi Kaltbach™ Cave-aged

Le Gruyère®, shredded

1 ½ cups Emmi Le Gruyère®, shredded

1 lb Assorted Mushrooms, sliced

½ lb Yellow Onions, chopped course (½”)

½ tbsp Olive Oil

½ cup Whole Milk

¾ tsp Truffle Oil

¼ tsp Truffle Essence

Black Pepper, ground

Salt to taste

½ cups Bread Crumbs

Method:

• Pre-Heat Oven to 350˚ Degrees

• Cook pasta very al dente, 5-6 Minutes.

• Drain pasta, rinse with cold water and set aside. Pasta can be cooked in advance and stored in zip lock bag for 2 days.

• Sauté mushrooms in olive oil over medium heat 3-5 min. Add onions and continue cooking until onions are translucent and lightly browned on edges. Take off heat and set aside.

• In a large bowl combine: cheese sauce, shredded Kaltbach™ Cave-aged Le Gruyère®, shredded Le Gruyère®, milk, salt, pepper and truffle oil and mix well.

• Place cheese sauce mix in sauce pan or in microwave container. Heat until warm enough to be soft and fluid. DO NOT ALLOW TO BOIL.

• Gently fold pasta and sautéed mushrooms and onions into warmed sauce.

• Place pasta and cheese mixture in a greased or sprayed casserole dish and top with bread crumbs.

• Cover and place in a pre-heated 375 degree oven for 20-30 minutes.
