To meet the latest strict European food hygiene standards for sushi bars and restaurants, Cold Service Distribution has launched the Friulinox Combi 4 into the UK – a compact, combined unit incorporating a chiller / freezer above a blast chiller / freezer.
“European regulations introduced late last year demand that raw fish must undergo ‘thermal treatment’ in a freezer to eliminate the risk of parasite contamination,” explains Adrian Westrup, Commercial Director at Cold Service Distribution. “The Combi 4 has been specially developed to provide this treatment in one compact and integrated piece of refrigeration equipment. It complies fully with the new regulatory requirements and is a great, hygienic solution for sushi bar and hospitality applications that’s easy to use and saves on space.”
Effective from December 2011, EU 1276/2011 specifies that raw fish must be stored at temperatures of -20˚C for a minimum of 24 hours or at -35˚C for a minimum of 15 hours. This process is aimed at eliminating parasites that can live within fish intestines. Without treatment, these parasites can survive in acid dressings, such as vinegar and lemon juice, commonly used for marinating raw fish, and can lead to an increased risk of food poisoning.
Available exclusively in the UK from Cold Service Distribution, the Combi 4 is a combined appliance offering GN2/1 capacity from Italian manufacturer, Friulinox. Raw fish can be frozen at temperatures as low as -40˚C for the required time within the unit and then stored, pre-portioned and ready for service, at a chilled temperature of 0°C.
