Fazer Culinary Team Finland to compete for the Culinary World Cup in November

Fazer Culinary Team Finland achieved record success in October 2016 at the IKA Culinary Olympics held in Erfurt, Germany, by winning gold for Finland in the competition's Community Catering category. Now, Fazer’s top chefs are aiming for the world championship; currently, the Fazer Culinary Team is preparing for the Culinary World Cup organised in November 2018 in Luxembourg.

The Culinary World Cup is a World Championship held every four years with teams from Asia, the United States and a number of European countries. The competition’s Catering category will include a record number of competing teams. After a tight qualifying round, 15 teams were accepted into the actual competition.

Following its superb success in the Culinary Olympics, the Fazer Culinary Team Finland has continued its work with a new line-up, still led by Senior Manager (R&D) Karri Käki from Fazer Food Services. Those who have continued in the team include the team captain Mika Pesonen, as well as, Tapio Bergström, Sami Toropainen, Reko Riikonen, Lilli Jyräs, Juha Aalto and Matti Tikka. New members to join the team are Lemmikki Ruuskanen and Antti Tynkkynen.

“We will be presenting genuine artisan expertise and cooking skills found at Fazer. We want to increase appreciation of the entire staff restaurant sector by our example. For my part, I have to confess that I am participating simply for ”love for the sport”, says Lilli Jyräs.

“The team has spent a lot of time together, both in the kitchen and outside it. This has contributed to a family-like atmosphere where nobody is afraid of expressing their opinions. The strengths of each team member are well known and are put into use for the good of the team. We are going into the competition full of exited anticipation, yet with a humble attitude. The Olympic medal in our pocket obliges us to aim for gold, and obviously we want to bring home a medal,” Jyräs says.

Fighting food waste as a theme

Fazer is continuously working towards reducing food waste in its restaurants, together with the customers. The theme for the competition menu is 'Fighting Food Waste'.

“Our mission in the competition is to prepare a bounteous lunch for 150 people in five hours. The lunch includes a salad bar, a soup, three main courses, four side dishes and a dessert, lists Antti Tynkkynen

“This year, the key theme for the competition is 'Fighting Food Waste', i.e. reducing and avoiding food waste. Due to the theme, we have been building the menu with great care so that we can use all the ingredients in the best possible way. The theme is an essential part of life in the kitchen, and it has to be clearly visible in not only the competition menu but also everyday work in our restaurants across the country”, Tynkkynen emphasizes.

Success requires Fazer Culinary Team to practice continuously. The team is also supported by our partners Atria, Hartwall, Meira Nova, Valio, Dieta, E. Ahlström, and Kalatukku Eriksson.
