20-10E: a space-saving combi
FEM’s Alto-Shaam CT PROformance combi oven reaches new standards of cooking performance and customisability
Combi ovens combine multiple cooking functions into a single appliance, providing operators with a vast amount of options in one piece of equipment. Now FEM (Foodservice Equipment Marketing) can supply the Alto-Shaam CTP20-10E PROformance Combitherm oven, a roll-in cabinet model that provides high volume production in a space-saving footprint. It is compatible with the Alto-Shaam integrated rack management system, making it ideal for both on-demand cooking and cook/chill/retherm banqueting.
Despite measuring only 906mm(w) x 1072mm(d) x 2012mm(h) it can accommodate 20 GN 1/1 pans. With the Alto-Shaam’s EcoSmart technology it is 40% more energy efficient, uses 80% less water and overall gives 60% higher productivity compared to conventional cooking appliances. Individual shelves can be programmed with separate timers, enabling different types of food to be cooked simultaneously.
The CTP20-10E can be upgraded with a wide variety of optional features as required. These include ProPower, which can deliver an instant heat boost to accelerate production or provide rapid temperature recovery. This makes it 20% faster than standard combi steamers. Other optional features are a grease collector with a 5 litre capacity and the ventless hood, which prevents grease droplets from escaping.
Additionally, an optional smoker attachment allows for both hot and cold smoking.
Using a simple to understand touch-screen interface, the PROtouch control panel includes customisable recipe management and intuitive one-touch programming. Recipes can be transferred to the unit by USB stick, along with system updates and diagnostic data
The LED-illuminated door handle provides visual feedback about the current status of the cooking program, making it simple for chefs to monitor the progress of the food.
Humidity can be controlled precisely, set anywhere between 0%-100% in order to increase quality, texture and yield. The five-speed reversing fan delivers balanced airflow throughout the interior for product browning and finishing.
The PROformance Series has many innovative safety features, including Safevent, which quickly removes steam from the interior before the program finishes. Meanwhile the triple-glass door keeps the outer surface cool to the touch. The frame of the door is also fitted with LEDs to help illuminate the interior.
Its zero clearance design means the Combitherm oven can be placed next to any piece of equipment on the line, helping to save space.
Using the convenient Combiclean Plus tablets in conjunction with the five automated cleaning programs enables operators to keep the oven in peak condition quickly and easily. An ergonomic, retractable spray hose is accessible from the front.
