COOK UP A FEAST THIS FATHER’S DAY
IMPRESS YOUR DAD WITH YOUR BBQ SKILLS!
Forget football and fishing, it’s all about food this Father’s Day (19th June 2011)! Take charge of the BBQ and impress your dad with your cooking skills, whilst he relaxes in the garden with an ice cold drink and you hope that the weather holds out!
Pull out the apron and light the coals! You can show your dad how great at outdoor cooking you are and how much you care about him, by making one of Merchant Gourmet’s favourite BBQ recipes - which use their Sun Dried Tomatoes and Wholewheat Giant Couscous - perfect for Father’s Day.
Reminisce about family holidays, whilst tasting the flavours of the Mediterranean with this barbecued chicken dish, marinated in Merchant Gourmet’s tasty Sun Dried Tomatoes. Perfect with a salad and new potatoes, it only takes half an hour to make - giving you plenty of time to get back on the BBQ and cook up seconds!
Cooking time: 20-25 mins
75g Merchant Gourmet’s Sun Dried Tomatoes
4 tbsp Garlic Infused Olive Oil
2 tbsp red pesto
3 tbsp dry white wine
700g mixed chicken portions such as breast fillets, drumsticks and wings
How to cook it:
Place the Sun Dried Tomatoes, oil, wine and pesto in a food processor. Blend until the mixture forms a paste (don’t worry if it’s lumpy)
Use a sharp knife to make 1.5 inch slashes across the skin of the chicken (careful not to cut too deep into the flesh) – this will allow the flavour of the marinade to get right inside.
Place the chicken in a large non-metallic dish, pour over the marinade and mix well (use your hands for best results) until the chicken is really well coated with the marinade.
Cover the chicken and leave to marinade in the fridge for at least 2 hours or overnight if possible
Cook the chicken over hot barbecue coals for 20-25mins or until cooked through – there should be no sign of pink when the chicken is pierced with a fork
Halloumi Kebabs with Lemon Herby Giant Couscous
For dad’s that enjoy vegetarian dishes, the Halloumi Kebabs served with Merchant Gourmet’s Wholewheat Giant Couscous are perfect!
Halloumi is a type of cheese from Cyprus and is available in all major supermarkets. It’s fab for BBQs as it doesn’t ooze and run like most cheeses!
The kebabs are easy to make, look impressive, and they’re a quick dish to cook – only taking 15 minutes – giving you time to relax with your dad.
Cooking time: 15 mins
110g Merchant Gourmet’s Wholewheat Giant Couscous
1 red pepper
240g SunBlush® Tomatoes, drained (save and use the oil)
Large bunch of parsley, roughly chopped
Handful of mint, roughly chopped
Juice of half a lemon
Salt and pepper to season
Cut the halloumi, pepper and courgette into chunks and arrange on skewers
Cook the Giant Couscous according to instructions on the pack. Drain and run cold water through until cool all the way through
In a mixing bowl mix together the giant couscous, 4 tbsp of oil from the SunBlush® tomatoes pot, the herbs, lemon juice and season with salt and pepper
Griddle/grill kebabs for 5-7 minutes on each side until the halloumi is golden
Serve the kebabs with a good helping of the Giant Couscous salad
