Rational unveils its ‘programmable-manual’ CombiMaster Plus

Rational’s new CombiMaster Plus has been developed for chefs who prefer to use their combi steamer as a manual machine – but with the option of programs just in case. With a 28% smaller footprint, the unit is slimmed down compared to Rationals’ previous manual combi.

Rational’s new CombiMaster Plus joins the recently-launched SelfCookingCenter whitefficiency, which offers the market’s most advanced automated cooking processes.

The CombiMaster Plus features several new technologies, including a centrifugal grease trap. This automatically separates out grease in the fan, doing away with the need to clean and replace conventional grease filters. It keeps the cooking cabinet’s air clean and guarantees great results, with a pure, grease-free taste experience.

The new combi steamer has simple controls with self-explanatory graphics and a rotary dial for accurate settings. When used for manual cooking, it offers four modes: steam cooking; hot air (convection) cooking; combination cooking; and ‘Finishing’, which uses Rational’s special regen technology. It also offers five air speeds, giving chefs complete control for whatever they are cooking – from robust dishes such as lasagne to delicate soufflés and éclairs.

There are up to fifty program slots, each with up to six steps, for automating recipes. The programs allow staff to reproduce any signature dishes, at the push of a button. Meanwhile the unit’s ClimaPlus ‘active climate management’ system constantly monitors the humidity of the cabinet, automatically adjusting it according to the chef’s settings.

Rational has introduced a new flow technology that combines dynamic air mixing with the CombiMaster Plus’s specially-shaped interior. This distributes heat evenly throughout the cooking cabinet, ensuring totally consistent results, even with a full load.

There are six model sizes in the CombiMaster Plus range, from six grid to 40 grid, all available in electric and gas versions.
