Commercial microwave helps pub offer wide-ranging menu

The Lobster is a traditional public house located in the centre of Sheringham, a town on the North Norfolk coast and a popular spot for visitors and holidaymakers. Serving up real ales and a menu of fresh home-cooked food with a focus on locally sourced ingredients, The Lobster has established a reputation as one of the best places to eat in the area.

Landlord Graham Deans has owned the pub for 13 years and says, “We make our food as fast as we can – but it’s not fast food.” During the summer season The Lobster regularly serves in excess of 200 diners a day, with microwaves playing a key role in helping keep up with demand. “We’ve always used Samsung, they’re so reliable,” says Graham. “They save a lot of time in preparation, which lets us offer a much wider menu.”

The Lobster has three CM1929 microwaves. They were supplied by Ripples, the commercial microwave oven specialist.  The CM1929 is Samsung’s flagship commercial microwave oven, with a power output of 1850W and an internal capacity of 26 litres - 35 per cent more than comparable compact microwaves.  It includes touchpad controls, seven power levels and the facility to pre-program settings for popular menu items. “Without the microwaves it would be much more difficult to keep up with demand during our busiest times,” says Graham.

Fishing has been a major part of the local economy in Sheringham for centuries, and the menu at The Lobster reflects this with a strong focus on locally-sourced produce.  “Our crabs are caught just two miles offshore, while our cheese and milk come from local farmers and our bread is baked just down the road. We like to use the best of all the ingredients available locally.”

While the menu’s highlights are focused on seafood, the microwaves let Graham and his chefs cater for all tastes.

“We use the microwaves for a variety of purposes”, says Graham, “For example, we use it to give soups a heat boost before they go out, they’re also ideal for making sauces and we can use it to reheat food we prepare in advance, like our beef Lasagne. They’re real workhorses, they get used all day, every day.”
