New Restaurant to Grace The Old Palace in Lincoln

A new restaurant showcasing the finest Lincolnshire produce is being launched at The Old Palace in Lincoln.

Following on from the success of the recent pop-up restaurants for Valentine’s and Mother’s Day, the hotel and conference centre in Minster Yard will be opening a permanent restaurant in the summer.

Open to members of the public as well as hotel guests, the restaurant will offer classic British cuisine cooked using high-quality locally grown and produced ingredients.

Head Chef Paul Newton explained: “Our aim is to offer freshly prepared, locally sourced food which is cooked to perfection. I’m not interested in experimenting with unusual combinations or creating fancy dishes made from ingredients you’ve never heard of.

I want to cook good honest food which tastes delicious.

“Lincolnshire produces more fresh food than any other county in the UK and the quality and flavour is superb. We want to work with as many county-based farmers, growers and producers as possible to demonstrate just what Lincolnshire has to offer.”

To help Paul in his quest The Old Palace has expanded its kitchen team and has taken on Sous Chef Kleo Tabaku.

Kleo, who has previously worked at The Old Bakery in Lincoln, said: “I am very excited to be involved in the new restaurant opening. I am passionate about creating delicious new dishes using local produce.”

The kitchen is also being remodelled. The Old Palace Manager Sonja Brockman added: “Since The Old Palace first opened as a boutique-style hotel in March last year we’ve continued to grow. We’ve expanded the number of bedrooms available by converting a nearby former church and taken on more staff.

“Although we’ve always catered for private dining clients as well as conferences and events we’ve never had an on-site restaurant, which seemed a shame as we have such a talented and experienced chef.

“Following Kleo’s appointment we now have the capacity to run a restaurant full-time and we look forward to offering exceptional quality food at an affordable price.”

The restaurant is expected to be launched in the summer and will be open from 6.30pm till 9.00pm Monday to Sunday.

Notes to Editors

• The Old Palace was built next to the site of the Lincoln Medieval Bishops’ Palace, which was the administrative centre of the largest diocese in medieval England, in three phases between 1720 and 1885.
• The ruins of the Medieval Bishops’ Palace are separate from The Old Palace itself and are managed by English Heritage on a guardianship lease from the Diocese of Lincoln.
• Once home to the bishops of Lincoln, The Old Palace is now a luxury hotel and conference centre offering 32 beautifully decorated rooms in the main building and the adjacent Old Palace Lodge – a former Victorian church which recently been converted.
• The Old Palace is one of only two Lincolnshire hotels chosen to be included in the 2013 Conde Nast Johansens Recommended Small Hotels, Inns & Restaurants Guide.
