Beyond Green Sustainable Food Partners launches zero-waste foodservice to address nutrition and waste in Chicagoland schools

CHICAGO, IL. July 25, 2013- Beyond Green is helping schools on Chicago’s North Shore change the way kids eat in school. School food has been under a looking glass for some time, but it can be challenging for schools to know where to start addressing nutritional and environmental concerns.

Beyond Green has been helping schools and other foodservice providers realize change since 2009 through waste management, recipe development, procurement analysis, and community engagement strategies. However, there are a variety of reasons why a cafeteria may not be in a position to utilize holistic consulting, and many schools have no kitchen.

Because Beyond Green is committed to fundamental change, it is growing a new branch of business to offer schools in these situations a foodservice option focused on healthy, responsible practices.

Launching in Chicago, Beyond Green will begin offering local schools a farm-to-table inspired foodservice that focuses on sustainability, nutrition, and sourcing local, fresh foods. They are currently running a crowdfunding campaign to help with necessary equipment costs: Campaign Page.

The Beyond Green difference will be in transparency and reporting. They will deliver monthly reports regarding procurement, waste, and their work with local farms.  

Greg Christian, CEO and Founder says: “Many companies are addressing organic, fresh, and healthy foods but clients have no way of confirming where food is coming from and how much is sourced preferably. Also, few companies address waste and resource management as part of running a nutritious foodservice.”

Various community members have approached Christian about foodservice because of his catering and chefing background and the fact that his consulting company specializes in sustainable foodservice.

Beyond Green will initially be working out of a shared kitchen; however, the kitchen lacks the necessary food warming and stainless steel equipment needed for school lunch delivery. To address this need, they have launched an Indiegogo campaign for equipment costs.
