Loch Fyne Oysters launch New Citrus and Black Pepper Infused Smoked Salmon

New salmon with a hint of citrus sunshine… Loch Fyne Oysters, Scotland’s leading seafood producer, has created a unique new product; Citrus and Black Pepper Infused Scottish Smoked Salmon to add to its much loved range. Loch Fyne Citrus and Black Pepper Infused Scottish Smoked Salmon uses the brand’s bestselling smoked salmon, marinated in gin and cured using salt, sugar, pepper, juniper and mixed citrus zest to give the smoked salmon a distinctive fruity flavour. Bruce Davidson, managing director at Loch Fyne Oysters Ltd, said: “The new Citrus and Black Pepper smoked salmon range combines refreshing citrus flavours and delicately smoked salmon to produce this fantastic new product. We enjoy experimenting with flavours to create exclusive smoked salmon products and feel that this range will become a firm favourite due to the increasing consumer demand for provenance and distinctive premium produce, qualities which are already synonymous with Loch Fyne Oysters.” Loch Fyne Citrus and Black Pepper Infused Scottish Smoked Salmon utilises only the finest ingredients, with unique smoking, curing and filleting methods. Produced with Freedom Food Salmon, an accreditation which ensures the fish is superior in taste, quality and colour, each salmon will be traditionally hand-filleted. After filleting, the salmon is hand rinsed in fresh highland spring water before it is delicately smoked for ten hours using oak wood shavings from retired whisky casks to add smoky overtones. Consultant chef Colin Bussey, who was involved in the creation of this new product said: “Having been a customer of Loch Fyne Oysters for over 15 years, consuming vast quantities of their fantastic produce from their amazing Oysters, mouth watering mussels, aromatic Bradan Rost and incredible hand cured smoked salmon, It was a great privilege as a chef to become involved with Loch Fyne Oysters nearly 2 years ago working on New Product Development along with Kevin Farrell, head of QA and his team Kerry and Shona. The brief from Bruce Davidson, MD was simple, come up with products that stand out, no gimmicks!
