Sustainable Seafood at Bistro Sixteen82, South Africa

Chef Brad is a passionate and proud supporter of SASSI (Southern African Sustainable Seafood Initiative) and Bistro Sixteen82 is committed to serving green-listed seafood in delicious and exciting ways.

On Monday, SASSI launched their Seafood Circle at the Harbour House Restaurant in the V&A Waterfront, Cape Town. The event honoured those chefs who have made a passionate commitment to using only sustainable seafood in their restaurants, in new and exciting ways (see below for more information on judging and the full list of winners). Chef Brad received one of the Trailblazer awards for his commitment to using only green-listed seafood at Bistro Sixteen82.

Prawns have recently been moved from green to orange in SASSI’s classification system, given the staggering by-catch involved with wild prawns and the waste generated with farmed prawns. With this news, Chef Brad has removed our signature dish of Gambas Pil Pil from our menu with immediate effect, keeping true to his mantra: Go green or go home!

Seventy restaurants throughout South Africa were assessed based on their approach to implementing, supporting and promoting sustainable seafood practices. The criteria on which the restaurants and chefs were assessed were:

- The restaurant’s seafood sustainability policy

- The effectiveness of their communication of their seafood sustainability practices to their customers, employees and suppliers

- Their level of engagement in communicating their seafood sustainability practices to a broader audience

- Whether they are going the extra mile to promote and support seafood sustainability
