Fast cleaning means quick turnarounds

Cleaning cooking equipment, either ready for the next batch of food, or at the end of a busy day, is an integral part of running a successful catering operation. It’s essential for food hygiene, taste and quality. Ultimately an establishment will be judged by cleanliness in the kitchen.

The FRIMA VarioCooking Center Multificiency, a multi-function piece of cooking equipment that combines the functions of tilting brat pans, boilers, ovens and deep fat fryers, has been designed so that the food no longer sticks or burns onto the cooking surfaces. All of which makes cleaning quicker, easier and safer. Its fast VarioBoost heating system and intelligent VarioCooking Control combine to produce even heating, alerting the chef when the food needs attention.

With the FRIMA, the cooking pan does not need to be soaked for long periods with chemicals before cleaning. This means that significantly less water and cleaning agent is needed than with conventional cooking appliances such as pans, boilers or deep-fat fryers. The VarioCooking Center Multificiency can be cleaned ready for use again in less than five minutes. This saves both staff time and effort.

As the food does not stick to the pan all staff need to do is direct the FRIMA’s integral water hose into the dirty pan to dislodge cooked waste. The pan is then tilted so the dirty water drains away – that’s all there is to it.

The FRIMA is really fast. For example, using a FRIMA 211, 15 kg of French Fries can be cooked, the unit drained, cleaned and be ready to cook a completely different dish in only 38 minutes from start to finish. The 30 litres of oil will take 17 minutes to heat up, the three batches of fries 15 minutes in total to cook, then 2 minutes to drain the oil and 4 minutes to clean the pan. In this case the cleaning only needed 9 litres of water and 5 mlitres of chemicals – a considerable saving over other types of cooking equipment.

The automatic tilting mechanism ensures operator safety while draining and storage and handling of chemicals is minimised as less are required in the cleaning process.
