FRIMA solves one of the catering world’s oldest problems: how to cook porridge without having a scorched, sticky pan to clean at the end.

Porridge is the food of champions. It’s more popular today than ever. Yet there’s a problem: it sticks. For chefs in busy kitchens the ultra-stickability of porridge means, however much customers may love it, it’s far from popular with kitchen staff who have to clean the pot, pan or kettle it’s made in.

Now FRIMA has solved the age old problem with an ‘intelligent porridge process’ for its VarioCooking Center Multificiency.

“It’s a new dawn for commercial kitchens,” says Graham Kille of FRIMA UK. “There will be no more scraping and scouring. After the porridge is served, all staff have to do is give the VarioCooking Center pan a quick rinse, using a minimal amount of water, and it’s ready for the next cooking process.”

The non-stick porridge is all thanks to the VarioCooking Center’s very precise temperature controls. Chef selects the porridge programme and adds the milk and water to the pan. The unit brings the liquid up to temperature but the VCC’s controls don’t allow it to boil over. Chef adds the oats, gives it a stir and leaves it. There’s no need to supervise the cooking process and it’s fast: 40kg of porridge can be cooked in just over 30 minutes, from starting to heat the liquid till it is ready to serve.

The precise temperature control and speed of cooking come from the VCC’s VarioBoost system, which heats the pan to 200°C in as little as 2 minutes. Its patented FrimaTherm contact layer means heat is transferred quickly and uniformly all over the base of the pan, without heating the sides, so there is no scorching or sticking. The VarioBoost system makes the FRIMA up to 96% efficient at heat transfer, reducing direct energy needs and also reducing the amount of kitchen ventilation required.

Because food – even porridge – never sticks, the VarioCooking Center doesn’t need a self cleaning system. Manual cleaning is easy, effortless and fast, allowing operators to clean the unit, with a small measure of water from the integral VarioDose system, and have it ready for the next cooking process in as little as two minutes.

The VarioCooking Center is equally competent with other potentially ‘sticky’ recipes such as sauces and milk puddings. Plus, being multifunctional, it can be used for a host of other processes including shallow frying, deep frying, boiling and pressure cooking.
