Nopal Capresse with Guajillo Vinaigrette
Ingredients
For the salad:
400g mozarella cheese slices, rounded
6 x nopal cactus leaves washed and boiled, cut in circles
basil leaves to decorate
For the vinaigrette:
3 x guajillo chillies with seeds (presoaked overnight) and cooked in boiling water
½ cup olive oil (125ml)
¼ cup cider vinegar (60ml)
a pinch of salt
Preparation
Grill the mozarella in a pan for less than a minute.
Place a cactus leaf on each slice of cheese.
Decorate with the basil leaves.
Blend the guajillo chillies with oil, vinegar and salt.
Dress the salad with the vinaigrette.
