Mexican food expert Katya Torres creates recipe for perfect summer soirees
Katya Torres, CEO of authentic Mexican food distributer mexgrocer.co.uk, knows that food from her native Mexico is hard to beat when organising a summer social event.
“Mexican food is fast becoming the third favourite food in the UK after Indian and Chinese cuisine. It allows anyone to discover new flavours, explore new ingredients and enjoy the range of taste sensations this food has to offer” Katya said.
Katya has come up with several mouth watering summer dishes designed to enrich any social gathering and create a talking point around the food. These include Shrimps with Habanero and Cilantro, Enchiladas Rojas and Nachos Mexican Style.
This week’s sumptuous recipe for a summer party is:
Ribs with Achiote
Portions: 4
Preparation time: 5 mins
Marinade time: 1-2 hours
Cooking time: 1 hour and 30 mins
Equipment you will need:
Balloon whisk
Plastic bag or sealed container
Aluminium foil
Mixing Bowl
Casserole dish
What you will need:
1kg Pork ribs
Note: You can use the same mixture to cook beef ribs or fish
For the marinade:
200 ml of Achiote Liquid from El Yucateco
200 ml of pineapple juice
2 Tablespoons of white vinegar
1 Garlic clove chopped
1 tablespoon of salt
1 teaspoon of pepper
Preparation Method:
Preheat the oven to 200C, 400F, Gas Mark 6.
Combine the Achiote Liquid from El Yucateco with the pineapple juice, vinegar, salt, garlic and pepper; mix them all together with a balloon whisk.
Cover the ribs with the marinade and place them into a plastic bag or in a sealable container. Ideally the ribs should be left to rest in the marinade for at least 2 hours; however, if you choose to put them in the fridge, they need to be in there for at least 1 hour.
Cover the casserole dish with aluminium foil, then place in the oven and bake for 1 and half hours, check them every 30 minutes and keep the bathing the ribs in the mixture, to keep them moist.
Serve up and enjoy!
