Mexican food expert Katya Torres creates recipe for perfect World Cup summer soirees

Katya said: “This recipe adds a classic Mexican kick to the mouth-watering pull pork burger, enough to feed four hungry people. It takes minutes to prepare and some time to cook but you can leave the pork to slow cook for a couple of hours whilst watching your country in the World Cup.

Pulled pork with Chipotle Salsa

Feeds: 4
Preparation time: 20 minutes

Cooking time: 2 hours

Equipment you will need:

Blender
Saucepan
Mixing bowl  

What you will need:

800g pork meat (pork shoulder)

1 Litre of chicken broth

8 buns

For the sauce
1/2 cup of orange juice
5 tablespoons of white vinegar
2 garlic cloves chopped
½ onion chopped
1 tablespoon of ground cumin
½ teaspoon of pepper
1 teaspoon of salt
4 tablespoons of Chipotle Salsa from El Yucateco Salsa de Chipotle Salsa, available at mexgrocer.co.uk

For the coleslaw
2 cups of white cabbage
2 cups of red cabbage
2 peeled, grated carrots
1 ½ cups of mayonnaise
1 tablespoon of sugar
2 tablespoons of white vinegar

Preparation Method:

Firstly place in blender: orange juice, 3 tablespoons of vinegar, the garlic, onion, cumin, salt, pepper and the Chipotle Salsa. Blend to create a sauce.

Place the pork in a saucepan with the chicken broth on a high temperature on the hob. Pour over the sauce you’ve just blended and leave to simmer for two hours.

Combine the white and red cabbage, carrots, mayonnaise, 2 tablespoons of vinegar with the sugar in a bowl and stir well.

When the pork is nearly cooked, pull it carefully into thin strips. Then heat the buns, so they are lightly toasted.

To serve place some meat in the buns and add a portion of the coleslaw, then dig in!
