The chefs at Primula Cheese know all too well how popular quick and easy ‘posh’ snacks are at Christmas so they’ve developed their very own ‘Santa’s snack hacks’, guaranteed to challenge any shop-bought nibbles

CHRISTMAS is a time when we relax the rules, eat what we want and snack throughout the day as family or unexpected guests arrive. It’s also a time when we may over indulge so a quick snack can often be a replacement for yet another rich meal.

The chefs at Primula Cheese know all too well how popular quick and easy ‘posh’ snacks are at Christmas so they’ve come up with their very own ‘Santa’s snack hacks’, guaranteed to challenge any shop-bought nibbles.

PRIMULA SANTA’S SNACK HACKS

1)  Avocado dip : (Christmas trees)

Ingredients:

1 ripe avocado

1 dessertspoon lemon juice

70g (approx half a tube) Primula cheese with Prawns

Pitta Breads - Toasted

Twiglets 

1 x red chilli - finely chopped

A few pomegranate seeds (optional)

Method: 

Peel and chop the avocado and place in a mixing bowl, add the lemon juice and Primula cheese with prawns. Using a hand blender blitz the mixture until smooth, or mix with a fork.

Cut the toasted Pitta bread into triangles and “pipe” or spread onto the pitta triangles. 

Sprinkle with the finely chopped chilli and top with a pomegranate seed.

Place a half twiglet at the base of the “tree” for the trunk. 

2) Christmas Star Sandwiches  

Equipment: one large and one small star cutter. 

Ingredients:

White Bread

Primula Cheese of choice

Chives - finely chopped

Red Chillies - finely chopped

Cucumber, cut into ribbons

Method:

For each sandwich lightly toast two slices of bread. Spread Primula cheese on one slice and sprinkle with finely chopped chives or chillies. Cut a large star out of the second piece of toast and then a small star out of the centre. Place this prepared star on top of the first slice of prepared toast and recut with the large star cutter to make a star sandwich.

The method for the cucumber one is exactly the same except:

-       Spread one slice of toast with Primula cheese of choice and overlap with cucumber ribbons. Proceed as above to cut out the star sandwich.

3) Tomato “Pops” 

Ingredients:

Small Italian red ripe tomatoes

Primula cheese of choice

Chives - finely chopped

Wooden Skewers

Method: (Note the skewers go into the stalk end!) 

With a sharp knife cut a lid off the base of the tomatoes (not the stalk end!) and, with a small sharp knife cut the core out of each tomato and scrape out the seeds. Drain upside down on kitchen paper.

Fill the tomatoes with Primula cheese straight from the tube. Insert a wooden skewer into the stalk end of the tomato. Sprinkle with chopped chives.

4) Fig and cheese starter - Serves 2 

Ingredients:

4 x Ripe Fresh Figs

Primula cheese of choice

4 x slices of Parma Ham

Pistachio nuts - finely chopped

Runny Honey

Method:

With a sharp knife cut a cross into the top of each fig, cutting two thirds of the way down and open each fig up slightly. Pipe Primula cheese into the centre of each fig, place two on each serving plate and surround the base of each fig with a slice of Parma Ham. Sprinkle with the chopped Pistachio nuts and before serving drizzle with runny honey.
