O Chef espanhol Ferràn Adrià defende que falta formação em administração e gestão dirigida às pequenas empresas de restauração, salientando que, em Espanha, “90% dos restaurantes não fazem um orçamento anual”, pelo que poucos negócios estavam preparados para a atual crise de liquidez e solvência.
