New SelfCookingCenter 5 Senses interacts with chefs to produce great cooking results

Rational has launched a new combi steamer. The company says its SelfCookingCenter 5 Senses is the first intelligent commercial cooking appliance that actually interacts with chefs, getting to know the way they work so that, together, the chef and their combi can always deliver the best possible cooking results.

As you’d expect from the name, the new combi’s ‘intelligence’ is built around five ‘senses’.

The first, which is based on a group of sophisticated sensors, is the ability to sense the cooking conditions in the chamber and the consistency of the food.

The second is its capability to recognise the size, load and condition of the food, and use this information to calculate the level of browning required, based on what it has learnt about the chef’s preferences.

The third allows the combi steamer to think ahead, in order to map out the food’s ideal cooking ‘journey’, in terms of the various processes and changes in cooking climate required to achieve perfect results.

Fourthly, the new combi learns how the chef prefers to cook, and implements these procedures into the cooking processes.

Finally, it communicates continually with the chef, showing the exact status of the food and how it is adjusting the cooking process in order to deliver the chef’s preferred results.

At the heart of the new combi is its interactive cooking control (iCookingControl) technology. It ensures food is prepared exactly the way the chef wants, by monitoring, controlling and adjusting temperature, time, air speed and the cooking climate – that is, the balance of dry heat and steam. The iCookingControl features a monitor that enables the chef to see exactly what is happening, at any time. It also tells the chef why any adjustments to the cooking process have been implemented.

Lee Norton, managing director of Rational UK, says, “While the main benefit of the iCookingControl monitor is to allow the combi to communicate and interact, so that chefs are always in control, we’ve found it also gives the whole kitchen brigade a sense of security and quickly engenders trust in this advanced cooking technology.”

Rational’s LevelControl makes it easy for chefs to cook different foods simultaneously, saving time, energy and costs. The new 5 Senses version, iLevelControl, not only shows staff which foods are compatible with each other, but also ensures each is prepared using the chef’s preferred specifications and cooking methods.

The SelfCookingCenter’s automatic cleaning system has also been upgraded. The new system, called Efficient CareControl, uses reformulated cleaning tablets that last 50% longer than previous versions, reducing costs and minimising environmental impact.

The SelfCookingCenter 5 Senses is available in six different sizes, from the six-grid 1/1GN table top model to the 20-grid 2/1GN floor standing unit, which holds up to 40 gastronorm pans. Rational’s HiDensityControl uses dynamic fan technology to ensure that, even with the biggest units, heat and humidity are constant throughout the cabinet, delivering absolutely consistent results.
