Rational has launched an accessory that allows the SelfCookingCenter whitefficiency to mimic the cooking characteristics of a tandoori oven. The new Rational grill and tandoori skewers make it easy for chefs to prepare and cook classic ethnic kebab-type dishes, such as tandoori chicken or chicken tikka, in their combi steamer.
The tandoori skewers securely slot into position in the specially designed Rational grill so they can be loaded and moved safely. The SelfCookingCenter whitefficiency’s sophisticated controls set the combi’s climate to be similar to that inside a traditional tandoori oven.
This system enables up to 100 tandoori or other kebab-type dishes to be prepared in around 15 minutes in a single load and with much less manual effort than in traditional cooking methods, whilst still producing high-quality authentic tastes time after time.
The SelfCookingCenter whitefficiency’s programmable control panel and intelligent cooking make it easy for less skilled staff to replicate the chef’s requirements. The chef sets up the cooking programme and other members of staff simply load up the skewers and select the appropriate programme - the SelfCookingCenter does the rest.
The climate inside the combi is maintained by HiDensityControl which precisely controls the speed of the fan to channel the heat and humidity to exactly where it is needed. Whilst, the model‘s Efficient LevelControl technology intelligently monitors the cooking time for each rack, according to the amount of food loaded and how often, and for how long, the door is opened during the cooking process. This ensures everything is cooked to perfection, every time.
Despite its name the accessory can be used for more than just tandoori recipes. The grill and tandoori skewers are ideal for preparing all types of kebab, from meat to fish or vegetables. Everything is grilled to perfection each time, and healthily too, as it requires no added fat or oil.
Both the grill and the skewers are made from high-grade stainless steel and are dishwasher-safe.
