NECTA Show 2014: Hands-on experience of latest Rational combi technology

Rational will be showing the latest SelfCookingCenter whitefficiency at the NECTA Show 2014. Visitors can get hands-on experience of the combi steamer and representatives from Rational will be available on the stand to advise and answer any questions.
The Rational SelfCookingCenter whitefficiency combi steamer can cook everything from pies to paninis, from jacket potatoes to muffins and from bread to pizza –all at the touch of a button, and all with perfect results.
And it’s all so easy. With HiDensityControl every item loaded, from the front of the top shelf to the back of the bottom shelf, is cooked identically, with absolutely consistent quality. A powerful steam generator and dynamic air mixing match the air flow and humidity to the cooking level of the product. This means cooking time is reduced and optimised.
For mixed loads, clever features like Efficient LevelControl tell the user which foods can be cooked at the same time, adjusting the time for each shelf according to the amount of food loaded and how often, and for how long, the door is opened during the cooking process. It even alerts the chef when each shelf is ready.
Because it is multifunctional, a SelfCookingCenter saves space, in fact it can replace 40 to 50% of standard appliances, reducing the kitchen footprint by at least 30%. Options such as the Ultravent condensation hood, which eliminates unwanted cooking fumes and steam, can do away with the need for extra, expensive extraction systems, making it possible to site the combi steamer front of house.
The latest Rational SelfCookingCenter whitefficiency has up to 30% more capacity, cuts energy consumption by up to 20% and reduces production times by up to 30%, compared to previous models.
The SelfCookingCenter whitefficiency control panel simplifies operating the new combi steamer because it constantly learns and automatically adjusts to the habits of the individual user. Meanwhile the ‘MyDisplay’ feature allows the display to be tailored by the chef. For example, any functions that are not needed can be removed from the display interface, keeping controls simple so that even untrained staff can produce the best possible results.
What’s more, at the end of the working day the SelfCookingCenter whitefficiency automatically cleans itself. All operators have to do is pop in a couple of cleaning tabs, when the unit instructs them to do so, and the Rational CareControl cleaning system does the rest – delivering just the right amount of cleaning to produce a sparkling clean interior ready for the next batch of cooking.
