Rational’s SelfCooking Center® whitefficiency® – an all day cooking expert

The working day is the theme on Rational’s Stand 511 at the Hospitality Show 2013. It starts with croissants and breakfast grill, moving on to steaks, pizzas, vegetarian options and chips for lunch followed by afternoon muffins.  Throughout the day Rational will demonstrate how the SelfCookingCenter whitefficiency cooks everything to perfection – and of course visitors get to try what’s cooked.

For those who want something a bit meatier Rational will also be putting the overnight roasting program of the SelfCookingCenter whitefficiency through its paces, so there will be fresh and tasty samples of various roast meats throughout the day.

The SelfCookingCenter whitefficiency is the latest version of the Rational combi-steamer. It uses new technologies to ensure perfect, trouble free cooking at all times – day and night.

Its HiDensityControl means that every item loaded, from the front of the top shelf to the back of the bottom shelf, is cooked identically, with absolutely consistent quality. A powerful steam generator and dynamic air mixing match the air flow and humidity to the cooking level of the product. This means cooking time is reduced and optimised, whatever is being cooked. Roasts are juicy and succulent, biscuits are crisp, soufflés are light and fluffy and vegetables don’t dry out.

Meanwhile Efficient LevelControl (ELC) makes it easy to cook different foods at the same time, in the same unit, to the same high quality. Rather than resorting to grill, oven or hob for separate items each rack in the Rational can be loaded with the different foodstuffs. ELC cleverly calculates exactly the correct cooking requirements for each rack and alerts the chef when they are ready. It even advises on what menu items can be cooked successfully together.

Together these technologies cut energy consumption of the SelfCookingCenter whitefficiency by up to 20%, increase capacity by up to 30% and reduce production times by as much as 30%, compared to previous models.

And that’s not all, when the working day is over the SelfCookingCenter whitefficiency can clean itself fully automatically. Its smart CareControl feature determines the level of soiling and alerts kitchen staff when to initiate the cleaning process. All they have to do is insert a couple of special cleaning tabs and switch on the machine. The SelfCookingCenter does the rest, precisely regulating the amount of cleaning and descaling required to produce a sparkling, hygienic clean finish ready for the next shift.
