Big time dishwash

Washing up in large institutions is a mammoth task and no two operations are the same. The type and quantity of dishes varies from one large-scale kitchen to another. Winterhalter’s latest MTF Series of flight-type dishwashers are suitable for large canteens, hospitals, other residential homes and airports. The largest of the MTF dishwashers the MTF5-6600LLLM, can process a staggering 6,600 plates per hour whilst still producing the first class washing results associated with Winterhalter.

Hygiene is particularly important in large kitchens, the MT5F’s high performance washing system uses a triple wash filtration system with comprehensive tank cover filter, pump inlet filter and Winterhalter’s Mediamat filtration system. Wash arms, profile of jet and pump pressure are precisely coordinated for best results. The angle of the wash arms can be individually adjusted and, where dishes with recesses are being washed, optional side wash arms ensure maximum coverage of surfaces.

Keeping operating cost low is another key area for managers of large institutions. The MTF5 is designed to reduce operating costs and save resources. It has a modular design with a loading zone, a pre-wash zone, main wash zone, rinse zone, air knife drying zone, a fresh air drying zone and an unloading zone with conveyor stop switch. The fresh air drying zone uses air extracted from the room (as opposed to from within the machine) to reduce humidity and aid efficiency. An exhaust air heat recovery system uses energy from warm exhaust air to heat up the cold incoming water. These features reduce the humidity and temperature of exhaust air, making the working environment more pleasant.

Touchscreen technology makes the MTF5 easy to operate, even for those for whom English is not their first language. Data relevant to hygiene and operation can be accessed quickly via the touchscreen, enabling kitchen management to maintain an overview at all times. All machine information and errors are communicated via visual and audible signals for immediate detection, ensuring, for example, the refilling of empty detergent and rinse aid containers. Tank and boiler temperatures can be displayed too, at any time, for the monitoring of safe operation.

A feature especially popular with staff is that the MTF automatically self cleans during operation. Rotating jets inside the machine’s roof use clean water drawn from the rinse tank to clean without any additional water consumption. At the end of an operational day, the entire interior is rinsed out with fresh hot water and the tank-water drained away.
