Culver City Japanese restaurant grows own produce for world-class omakase meals

LOS ANGELES – June 7, 2011 – Farmscape, LLC announces its partnership with recently opened Culver City Japanese Restaurant, n/naka, to provide the high-end eatery with organic garden service. This partnership is part of a larger strategic shift for the urban farming company to broaden its focus on Los Angeles businesses interested in sustainable agriculture and edible landscaping.

“At Farmscape, we’re looking for creative and compelling ways to encourage more Angelenos to participate in urban agriculture,” says Farmscape CEO, Jesse DuBois. “We hope our partnership with n/naka, and other green-minded businesses in Southern California will help more people realize the quality and convenience of urban farming and highly productive organic gardens.”

Farmscape worked closely with n/naka’s owner and renowned head chef, Niki Nakayama, to develop a custom organic garden that would provide the restaurant with first-class, organically grown produce. The food grown in the Farmscape garden is often hard-to-find Japanese and Asian varietals seldom offered by Southern California farms or organic suppliers.

“I put a lot of thought into how I wanted to source the ingredients for my dishes,” says Chef and owner Niki Nakayama. “For the vegetables and herbs, I wanted them to be as fresh as possible - it’s hard to beat harvesting them the same day they go into the dish.”

Nakayama opened n/naka as a culmination of a ten-year effort to design the ultimate Japanese kaiseki cuisine experience. Nakayama’s philosophy incorporates fresh local ingredients prepared to highlight their own natural flavors. Having a dedicated Farmscape organic garden at the restaurant brings n/naka that much closer to what the originators of kaiseki cuisine intended.

The Farmscape garden for n/naka consists of four raised-bed gardens with more than 130 square feet of planting area. The gardens are made of a modular, redwood design and installed with automatic drip irrigation. Farmscape’s special mixture of amended organic soil and compost ensures the greatest yield from the efficient garden beds. Expert and friendly Farmscape Farmers maintaining the gardens weekly.

Farmscape started offering organic garden installation and maintenance to residential customers in 2009. In response to growing interest and requests from institutional clients (schools, small businesses and corporations, civic spaces) the company now offers a wide range of services to non-residential customers. Farmscape hopes that this new strategic focus will become a significant portion of the business moving forward.

About n/naka

At n/naka (n-naka.com), Chef and owner Niki Nakayama practices the art of kaiseki, a form of traditional Japanese cuisine, presented as intricately prepared small dishes that use seasonal, natural and local ingredients – a farm-to-table cooking style that originates in 16th century Japan. Using a blend of both traditional preparation and modernist techniques, Chef Nakayama, in her nine or thirteen course omakase tasting menus, pairs Japanese flavors with nods to French haute cuisine. To further enhance the specialized dining experience, n/naka boasts an intimate 26-seat dining room and dining is by reservation only.
