The commercial microwave shouldn’t stand idle. It can be a very useful prime cooker taking up the slack when the main equipment is in use.

The smoked salmon and spinach roulade in the starter section is ideal for busy caterers, as it is best made one day in advance so it can set overnight in the fridge, ready to be served the next day. All front of house staff have to do is chalk it up on the specials board.
Ingredients include soured cream, smoked salmon, freshly chopped dill, fresh or frozen spinach, butter, eggs and freshly ground black pepper and nutmeg to season. The method is simple: mix the soured cream, smoked salmon and dill together to form a spreadable paste. Cook the spinach for two minutes in the microwave, leave to stand for a minute then squeeze and drain off all the excess moisture. Chop and mix with butter, nutmeg, black pepper and the egg yolks.
Meanwhile, whisk the egg whites and fold into the spinach mixture. Spoon into a lightly oiled, microwavable Swiss roll container and cook in the microwave for two and a half minutes until spongy. Turn it out onto greaseproof paper, spread with the paste, roll it up, wrap in cling film and leave in the fridge until serving time. Cut into 2cm slices, garnish and serve.
