Pop-up Sparks Interest in Electric Bar & Restaurant
LINCOLN, UK – 6th December 2011 – The Electric Bar & Restaurant at the new DoubleTree by Hilton Lincoln, due to open on 21st December, caused a stir recently when it staged the city’s first ever pop-up restaurant.
Head Chef Alec Maxfield and his team took over the kitchens at Lincoln College’s Sessions Restaurant for two nights only in November raising £700 in the process.
Invited guests were treated to a four-course meal with wine and cocktails and invited to make a donation towards the college.
Alec and Bar Manager Andy Hallam also ran some workshops for the catering and hospitality students at the college.
DoubleTree by Hilton Lincoln’s Restaurant Consultant Dan Ralley said: “The purpose of the pop-up restaurant was two-fold. We wanted to give people a flavour of the exceptional standard of food and service they can expect to receive at The Electric Bar & Restaurant and build links with Lincoln College.
“The college delivers some excellent courses in professional cookery, hospitality, food preparation and food and beverage service so DoubleTree by Hilton Lincoln is keen to work with them as an employer.
“They also have fantastic facilities on campus and very kindly agreed to let us hold The Electric Bar & Restaurant pop-up in college’s Sessions Restaurant so we’re very grateful to them for that.”
The students who attended the workshops during the day were also offered the opportunity to work in the kitchens and front of house at the pop-up restaurant in the evenings.
Lincoln College Principal John Allen commented: “I attended the event myself and the food was fantastic. I know from speaking to some of the students involved how exciting they found the whole collaboration.
“Working alongside world-class chefs has reinforced their decision to enter the hospitality business, and shown many of them where they want to be a few years into the future”.
On the pop-up restaurant menu were some of Alec’s signature dishes including posh fish and chips with pan fried fillet of halibut, confit potatoes, garden pea and mint puree, soy glazed leeks and pan juices and rich liquid chocolate cake with textures of cherry.
Alec, who has worked at some of the best restaurants in the UK, including the two Michelin star Hambleton Hall in Rutland and The Fat Duck in Bray, said he wanted to literally give people a flavour of what’s to come.
“The Electric Bar & Restaurant will offer modern British cuisine in spectacular surroundings. Lincolnshire produces some of the best food in the country and I want to make the most of what’s available locally and let the food speak for itself. If its a beef dish I’ll let the beef do the talking instead of overpowering it with other ingredients and flavours.”
DoubleTree by Hilton Lincoln will be the city’s premier upscale aspirational hotel and offer 115 modern and well appointed guest rooms at the DoubleTree by Hilton Lincoln, 17 of which will be spacious studio suites, each with a balcony.
A panoramic glass lift, which will create a stunning feature on the front of the hotel facing the Brayford Pool, will take diners directly up to The Electric Bar & Restaurant on the fifth floor which will have breathtaking views of Lincoln Cathedral and Brayford Pool.
