Diabetic Carrot Cake Recipe

Ingredients

4 large eggs

2 tbsp Vanilla extract

12 ozs Veg Oil

3 tsps cinnamon

7 ozs Unsweetened Apple juice

1 lb Grated carrots

2 tsps Baking powder

5¼ ozs Raisins

4 ozs Chopped nuts

12 ozs Self raising wholemeal

1. Whisk the eggs in a LARGE bowl,add the oil whisk again.

2. Sift the dry ingredients together in a smaller bowl add to egg & oil mix, add the vanilla add the apple juice, stir in the grated carrots, fruit and nuts.

3. Pour the mix into 2 9" lined cake tins bake in a pre-heated oven gas mark 3 for 45/50 mins or until a skewer comes out clean.

4. Cool in the tin for about 10 mins take out of tins put onto cooling trays to get cold. 

5. Leave overnight, can be frosted with,1, 200g tub of light Philadelphia cream cheese mixed with zest of 1 orange, or left plain.
