It’s perfect for a quick pre-theatre snack, to enjoy a more leisurely dining experience or to grab an after-show drink while waiting to see if any actors or comedians drop by. Chris Graham, who bought the bar about four years ago, aims to make sure it remains one of Edinburgh’s best restaurants. From the start he set about specifying equipment he knew he could rely on. “It gets pretty manic here in the Festival time,” he
