Michelangelo’s heat regeneration system is a revolutionary development from Cuppone. The system serves to minimise heat-loss by immediately circulating the heat back inside the oven when the door is opened – a key feature for busy restaurants. The oven also boasts a low 12V voltage lighting system that is capable of withstanding the extremely high temperatures required for cooking pizza, whilst a full length, double glazed panoramic window and internal lights are also featured so that progress can be checked whilst cooking, without wasting heat.
Michelangelo also features a digital control panel with up to 100 programmes, together with a cleaning mode and end of cooking buzzer. The digital temperature control system has the ability to set the temperature of the chambers and the power of the two groups of heating elements (top and bottom) in a different way from 0% to 100%, enabling maximum efficiency to be achieved during cooking or with little or large workload, and with the minimum use of electricity.
The economy function of the oven, which is used during periods of work-break, automatically brings the temperature and power of the oven elements to a standby position that enables power to be conserved. If required, power may be resumed quickly to the ideal temperature for each workload. A weekly timer with auto power that can be programmed two times a day is also available.
Highly energy efficient and built to last, this oven can deliver perfect results every time thanks to its cordierite stone cooking base that retains heat and ensures a perfect, authentic Italian stone-baked flavour. As well as pizza, it can be used to cook other dishes, including pasta, jacket potatoes, fish and vegetables. It can also be used to reheat or finish off dishes that have been prepared in advance.
