Cucina Restaurants MD blames 'cost based' approach for recent crisis

Steve Quinn, MD of school catering company Cucina Restaurants has called for a complete rethink on the use of processed foods in the UK. Writing in his company blog, Quinn blamed the use of processed meat products as the major reason for the recent horse meat crisis. Blaming a system which places too much emphasis on lowered costs, Quinn said:

"If supermarkets and suppliers are only driven by the need to drive costs lower and lower in order to make bigger margins, other links in the manufacturing chain will be under great pressure to take shortcuts just so that they too can make their profit."

Quinn pointed to the inevitable compromises that such a system brings, adding:

"Caterers who avoid this path by careful ethical sourcing and cooking everything from scratch avoid any risk of contaminated food - it just won't happen."
