A hi-tech cooking machine that increases yield per pound from meat by up to 17% is shown to the butchery market at Meat Up 2013.

The FRIMA VarioCooking Centre Multificiency is on display on the Windsor Food Machinery stand, number 337. As well as reducing shrinkage, the FRIMA unit is easy to use, up to 30% faster and 40% more energy efficient than conventional cooking equipment, and produces brilliant results thanks to its automated controls.

The FRIMA is also multifunctional: it can be used to pan fry, boil, deep fry and pressure cook and can be left to cook hams and other joints of meat overnight. So as well as being ideal for pie fillings, the unit can extend the butcher’s menu.

The increased yield is a result of the FRIMA’s VarioBoost heating system, which is super-fast and gives very precise temperature control. This means when meat is seared it loses less of its juices. For example, the FRIMA can sear 60kg meat in just 21 minutes. Because the juices stay in the meat, the yield is increased and the food is more succulent and tasty.
