FRIMA’s VarioCooking Center® Multificiency® takes the guesswork out of pressure cooking

Pressure cooking is a classic technique used by chefs to not only speed up cooking but to tenderise meats in stews and goulash. But traditionally, the technique has demanded constant monitoring to avoid overcooking, so tying up staff who could be getting on with other duties.

FRIMA’s new VarioCooking Center Multificiency models 112+, 211+ and 311+ offer a completely reliable and accurate way to pressure cook, doing it faster and more consistently than most dedicated units and without any need for monitoring.

In the pressure cooking mode FRIMA’s intelligent VarioCooking Control constantly checks the temperature and pressure throughout the entire cooking process, adjusting as necessary. All the chef has to do is select the desired result on the touch pad controls and leave the FRIMA to do the rest.

This way, the cooking time is halved, compared to conventional cooking methods, and perfect food is guaranteed every time. For example, in just 108 minutes the FRIMA 311 Multificiency can produce 60kg (240 portions) of goulash, including pre-heating and cleaning the unit afterwards!

As well as pressure cooking, the FRIMA VarioCooking Center combines the functions of tilting brat pans, boilers, ovens and deep fat fryers. It’s also excellent for overnight slow cooking. So, it could be used to prepare a stew overnight, then pasta and pasta sauce for the lunch menu, and finally deep frying or pressure cooking vegetables during the lunch service itself.
