At TUCO’s 2014 conference visitors will get the chance to get hands-on with the latest combi steamer technology, with the debut of Rational’s new SelfCookingCenter 5 Senses.

Rational’s SelfCookingCenter 5 Senses is an advanced combi steamer that can roast, poach, bake, toast, braise and pan fry - all at the touch of a button and all with consistent quality.  The market leading combi steamer and the cooking appliance of choice for most university caterers saves time, energy and money, whilst cooking food perfectly, every time.

The SelfCookingCenter 5 Senses can prepare a substantial range of items for a hot food counter in just 60 minutes and keep it stocked with fresh food as required. This is made possible by using iLevelControl, which cooks many different foods at the same time. Shorter production times mean the counter can be stocked on a rolling basis, so that food is fresher and tastier as it is not hanging around waiting to be served. 

At the heart of the new combi is its interactive cooking control (iCookingControl) technology. It ensures food is prepared exactly the way the chef wants, by monitoring, controlling and adjusting temperature, time, air speed and the cooking climate – that is, the balance of dry heat and steam. The iCookingControl features a monitor that enables the chef to see exactly what is happening, at any time, even telling chefs why any adjustments to the cooking process have been implemented. 

Because it is multifunctional, a SelfCookingCenter saves space, in fact it can replace 40 to 50% of standard appliances, reducing the kitchen footprint by at least 30%. The latest Rational SelfCookingCenter 5 Senses has up to 30% more capacity, cuts energy consumption by up to 20% and reduces production times by up to 30%, compared to previous models. Options such as the Ultravent condensation hood, which eliminates unwanted cooking fumes and steam, can do away with the need for extra, expensive extraction systems.

The SelfCookingCenter 5 Senses features an upgraded automatic cleaning system, Efficient CareControl. All operators have to do is pop in a couple of cleaning tabs, when the unit instructs them to do so, and the Rational Efficient CareControl cleaning system does the rest – delivering just the right amount of cleaning to produce a sparkling clean interior ready for the next batch of cooking. The new system uses reformulated cleaning tablets that last 50% longer than previous versions, reducing costs and minimising environmental impact.
