Honeyed figs, grilled seabass and roast breast of lamb are just a few of the delicious dishes on offer on the new seasonal summer menus at the Waterfront Restaurant & Bar.

Located midway between Bedfordand Cambridge, diners can make the most of the new culinary delights available at the award-winning AA Rosette restaurant at Wyboston Lakes and, weather permitting, can dine ‘al fresco’ taking advantage of its beautiful lakeside setting.

The ‘starters’ menu features new additions such as pea and mint soup with crème fraîche, honeyed figs and gorgonzola with braised chicory, honey and mustard vinaigrette and duck rillettes with apricot and ginger chutney and sourdough toasts.

Pan-roasted guinea fowl supreme with smoked bacon, pea risotto and pan juices; roast breast of lamb with red chard, parsnip Dauphinoise, sweet potato purée and red wine jus; and grilled red snapper with sautéed pak choi, broccoli, chillies and red amaranth are just some of the tasty highlights on the new ‘main dishes’ menu. A variety of Aberdeen Angus steaks can be enjoyed from the char grill and a selection of side dishes is also available.

Sweet summer treats included on the ‘dessert’ menu are English strawberries with clotted cream panna cotta, honeycomb and strawberry daiquiri; chocolate tiramisu with sweet dough sticks; and an iced honey crumble parfait with local raspberries, lemon curd and brandy snap.

For those looking for a quick bite to eat to satisfy those hunger pangs, the All Day Easy Eating menu available in the Lounge Bar between 7.00am and 9.30pm offers a range of deli sandwiches, pizza, pasta, salads and light meals.
