Excelsior Hotel Ernst's restaurant “taku” has once again been honored with a culinary star.
Cologne, 12th November 2013. It's official now: the East-Asian restaurant „taku“ received a Michelin-Star once again. It was in November 2011, when the top-restaurant-guide ennobled the gourmet mecca with the most important award in fine dining industry for the first time. Now the succes-story continues: According to the most recent: „Guide Michelin 2014” Excelsior Hotel Ernst's 'taku” and executive chef cook Mirko Gaul are ranked among the best of the best.
The kitchen's success under Gaul's leadership indicates, according to the manager of the Excelsior Hotel Ernst, Henning Matthiesen the hotel's excellent overall performance: “I am very pleased with the well-deserved award which Mirko Gaul and the amazing taku-team have received. We also consider the star as a special recognition of the hotel's ambition to maintain our gastronomy at a very high level.”
Traditionally, the critics of the Guide Michelin only award “very good cuisines which deserve the reader's recognition” with a culinary star. The 2014 list of all the honored restaurants is impressive. Listed are a total of 274 restaurants that have been awarded with at least one star. To Michael Ellis, Chief of Guide-Michelin, this year's list emphasizes the “outstanding development that Germany has undertaken”.
Born in Cologne, Mirko Gaul is now regarded as one of the most pioneering masters of modern cuisine and also as one of the leading cooks of his generation when it comes to creativity. Gaul began his career at “taku” in 2009 as “Demi Chef de Partie.” Due to his ever-lasting inventiveness, he soon became the restaurant's “Sous Chef”. Ever since, Gaul passionately masters the East-Asian restaurant at Excelsior Hotel Ernst. “taku” is Japanese and stands for “house of hospitality”- which is why the restaurant is set up as East-Asian oasis with an inviting atmosphere. As soon as you walk in, a small glass-covered river filled with koi carps, provides the place with a balancing and wondrous sense of calmness. Asian purism and clearness dominate the unobtrusive decorations. The style elements are reduced to clear lines and are facing the guests, building the perfect frame for an authentic experience of all senses. The culinary range is completed by an extensive variety of wine and carefully-selected sake.
The Excelsior Hotel Ernst is Cologne's Grandhotel, located right to the famous Dom Cathedral. The hotel has been founded in 1863 and has been family-owned ever since.
