Popular Knightsbridge hotel gets latest Winterhalter technology

In 2013 the Jumeirah Carlton Tower Hotel,London, installed its first Winterhalter dishwasher, one of the new PT passthrough machines.  The warewasher was part of a competition prize won by one of the hotel’s kitchen porters, Bartek Malek, when he became KP of the Year 2013.  Executive Chef Simon Young has been very impressed. “The PT is working all day, every day, from 6am to 3am, and the results are consistently excellent,” he says. 

The Winterhalter is in the hotel’s popular, front of house casual dining area, the Chinoiserie. ”It’s a very busy, successful operation, morning, noon and night, we can have 100 covers at a time in the evening easily,” says Simon. 

Being constantly busy means the machine has to work fast.  The new Winterhalter passthrough machine features an energy control system that speeds up the washing process, increasing rack capacity per hour by 28% and reducing heat-up time by 50%.  This means it is ready for action faster than conventional passthroughs, allowing back-to-back rack washing, a huge bonus for a busy operation like the Chinoiserie, especially in peak times.

“It works well, I’ve been very impressed, it’s fast and everything comes out clean, shiny and dry,” says Simon. 

The Chinoiserie has distinctive crockery featuring Chinese flowers.  “The bone china we use has a delicate pattern and the Winterhalter copes with it brilliantly – with some machines it can get worn away, but not with the PT.”  The ability to protect fine ware is thanks to the machine’s VarioPower system.  This allows the operator to adjust the wash programme to the level of soiling and the delicacy of the ware, simply by touching the relevant graphic on the control panel.  VarioPower fine-tunes the various wash factors, such as the water pressure, to ensure best results,

Sustainability is important to the Jumeirah Group and the PT scores well here, too, as it incorporates a variety of energy and water saving features.  It’s the first machine on the market to have a heat exchanger fitted as standard – it converts waste energy from vapour and uses it to heat up the incoming water supply, saving around 10% in energy costs. 

The PT at the Jumeirah can process up to 77 racks per hour for glasswashing and 72 per hour for dishwashing. Its elliptical wash arms feature individually formed, sized, positioned and angled jets which deliver 100% coverage, even into the wash cabinet corners, and achieve high pressure washing of heavily soiled items. 

The patented ‘full jet’ filtration system which, in conjunction with Winterhalter’s established Mediamat filter, constantly cleans the washwater to ensure it is clear of impurities.  Meanwhile a clouding sensor in the wash chamber monitors the washwater, taking only as much replenishment water as is required. These sophisticated filtration and monitoring systems enhance the efficient discharge of food residues by up to 35%, compared to previous models, further minimising water consumption and delivering the best possible wash results.
