Fazer’s Master Confectioner Eero Paulamäki will represent the Nordic and Baltic countries in the final of the World Chocolate Masters competition in October 2022 in Paris. The talented chocolate expert’s qualification to the final brings great joy and honour also to Fazer as Paulamäki is the first ever Finnish finalist in the competition.

World Chocolate Masters is the world’s leading competition in the chocolate industry. The competitors are evaluated by their technical chocolate-handling skills, creativity, and the ability to combine modern trends with traditional craftmanship. The selected top 18 professionals from around the world will face off in Paris on 29–31 October 2022. The theme of the competition is Tomorrow.

I’m delighted that people have had faith in me and that I have been able to hone and develop my skills in work tasks that have challenged me to aim high and boldly experiment with new things – the word ‘impossible’ is not in my vocabulary! Innovativeness and sustainability present in competition entries

Fazer focuses on food experiences and future sustainable food solutions and Paulamäki’s competition entries strongly feature both sustainable solutions and innovativeness.

 “In the final, the theme of my competition entries is ‘Renewable tomorrow’. It is an active form of the main theme “Tomorrow” given to all competitors, and the idea behind my work is to inspire us to do concrete good deeds for tomorrow. I want to show how traditional craftmanship and food technology that will enable sustainable food production in the future can go hand in hand. For example, in the confection in my qualifying entry, I used xylitol made of oat hulls, a side stream of Fazer’s oat mill,” Paulamäki continues.

In the qualifying competition, Eero made four pieces: a chocolate sculpture, a pastry, a vegan snack product, and a confection. The peculiar feature of Eero’s works was that he utilised oats in its different forms in addition to ginger, cinnamon, and cocoa fruit grown in the Fazer Experience Centre’s winter garden. Some of these ingredients will also be featured in the competition final in Paris in October 2022 – Nordic oats and xylitol made from it, in particular, will play a key role.

World Chocolate Masters 2022

World Chocolate Masters is the world’s leading chocolate industry competition. Of the 20 regional selection rounds organised around the world, 18 finalists were selected to face off in Paris in October 2022. In the competition, the finalists will be judged in their technical chocolate handling skills, creativity, and their ability to mix and match current trends with traditional craftsmanship. The theme of the competition is Tomorrow, and the finalist with the most points will gain the title of World Chocolate Master.

The World Chocolate Masters competition was first organised in 2005, and this year the competition will be organised for the eighth time. Fazer’s Master Confectioner Eero Paulamäki will represent all of the Nordic and Baltic countries in the competition, and he is the first ever Finnish finalist in the competition’s history.
