The World Chocolate Masters is the only competition in the world solely dedicated to chocolate professionals. Fazer’s Master Confectioner Eero Paulamäki will represent the Nordic and the Baltic countries in the competition. He is the first ever Finnish finalist in the competition’s history. The competition will take place in Paris on 29–31 October under the theme #Tomorrow. This compelling theme will challenge the finalists to find new solutions by using their creativity as well as new technology.

Every two years, the world’s leading pastry and chocolate talents gather to compete in the three-day World Chocolate Masters. The 18 individual finalists are tasked with seven challenging assignments and judged in their technical chocolate handling skills, creativity, as well as their ability to mix and match current trends with traditional craftsmanship.

Each finalist will share their vision of what chocolate will taste, look and feel like tomorrow.

New craftsmanship distancing from the past but always with the focus on flavour

Eero Paulamäki’s theme for the final is “#Renewable tomorrow”, which is an active form of the competition’s main theme, given to all contestants. The pieces created by the talented confectioner for the competition show how chocolate can surprise and delight us with unexpected ingredients, and also how sustainability fuels creativity. 

“In the #TASTE assignment, I will be preparing chocolate patisserie in front of the jury, using such ingredients as Nordic rye and gooseberries, which are great ingredients also for sweet baking. I want to highlight local produce,” says Eero Paulamäki, Fazer’s Master Confectioner and the first ever Finnish finalist in the Word Chocolate Masters.

Following the 78-page assignment brief, Eero is using such ingredients as Nordic oats, globally known for their purity and high quality, as well as Finnish water, which has been rated the best in the world.

“For the #SHARE assignment, my centrepiece is a 3D-printed, star-like snowflake. To win the championship, superior chocolate handling skills are not enough; you must also master modern techniques. My competition creations include brave choices of new, sustainable ingredients, such as the sweetener xylitol, which is made from oat hulls generated as a side stream of Fazer’s oat milling process,” Eero Paulamäki continues. “I have picked the best tastes and innovations of the North for my competition creations. The final will be an extremely high-level competition, and it is absolutely magnificent to be there representing the Nordic and Fazer!”

Assignments push finalists’ skills and creativity to the limit

During the first two days of the competition, Saturday and Sunday, 29 and 30 October, all 18 finalists complete five assignments. They must do everything themselves, without any assistants or coaches.

In the #SHARE assignment, the finalists are tasked with creating a chocolate gift for six people or more that could have the power to replace the bottle of wine as a gift brought to a dinner party, for example.  In the #WOW assignment, they create a visually impressive window display that tells a story. Eero Paulamäki’s window display features a fairy admiring the regeneration of nature.

In the #TASTE assignment, each finalist demonstrates their view of the theme #Tomorrow in a product that includes a local ingredient sourced close to their home. In the #BONBON assignment, the contestants visualise tomorrow in the form of a chocolate praline. Eero Paulamäki’s bonbon is entitled Re-new. The #YOU assignment is a one-minute power speech in which the finalists tell their personal story.

The third day of the competition, Monday 31 October, is a super finale for the top ten finalists. In the #TRANSFORM assignment, the finalists create a concept and transform it into three varieties for three target audiences. Eero Paulamäki’s chosen target audiences are the elderly, hedonists, and the “entertain me” youth, for whom he has created variations of a waffle dessert.

The final assignment is #DESIGN, which requires the finalists to combine every chocolate skill they have and create a design piece that is completely edible and delicious. Eero Paulamäki’s design draws on the same story as the #WOW assignment’s window display.

The competition jury consists of 18 members, one from every region that is participating, led by a team of four heads of the jury with the world’s most followed chocolate and patisserie specialist Amaury Guichon as its chairperson. The winner of the title World Chocolate Master will be announced in the Salon du Chocolat at 8 p.m. Finnish time.

World Chocolate Masters is the world’s leading chocolate industry competition. Of the 20 regional selection rounds organised around the world, 18 finalists were selected to face off in Paris on 29–31 October.
