Restaurant SPILL expands into Wihlborgs’ triple-certified office building in Hyllie
Wihlborgs has signed an agreement with restaurant SPILL to lease 500 square metres at Kvartetten (Pulpeten 5), a new Zero CO2 certified office building in Hyllie, Malmö. The restaurant, whose concept is based on reducing food waste, will open its doors in the beginning of 2023.
Restaurant SPILL currently operates at Gängtappen in Dockan, but is now expanding with a new restaurant at Kvartetten on Skrivaregatan in Hyllie. The restaurant has a sustainable concept that is based on serving lunch cooked with produce that would otherwise have been discarded.
SPILL is run by Erik Andersson Mohlin and Ellinor Lindblom Mohlin, who both have a background from the Michelin restaurant Daniel Berlin Krog in Österlen. SPILL is currently a popular and award-winning lunch restaurant that has awoken considerable interest in Sweden and internationally.
“Being able to open a new restaurant where we can make use of even more food waste will be incredibly fun and exciting. We have a good partnership with Wihlborgs and feel extremely honoured to be able to run a restaurant in a triple-certified building. In addition to serving the lunch of the day, which we are already doing at Gängtappan, we will also have a small section in the restaurant where we can offer business lunches and à la carte. The possibilities are endless,” says Ellinor Lindblom Mohlin and Erik Andersson Mohlin, the owners and founders of SPILL.
Kvartetten, Wihlborgs’ third office building in Hyllie, is certified in accordance with Zero CO2,, WELL and Sweden Green Building Council Gold. The Zero CO2 certification aims to achieve a net climate impact of zero over the building’s entire lifecycle. One aspect of the efforts to reduce any negative climate impact from the building involves focusing on reuse, which allows Wihlborgs to use resources responsibly. When SPILL moves in to Kvartetten, the kitchen will, for example, consist of equipment that has been recovered from other properties.
The WELL system focuses both on soft and on hard values with the aim of improving people’s health and wellbeing.
“Kvartetten will become a state-of-the-art climate and environmentally-certified office building with a focus on the people that will work there. We are incredibly happy that SPILL, with its high sustainability ambitions, wants to continue its success story at Kvartetten and that we can offer our tenants and visitors sustainable food prepared by recognised chefs,” says Peter Olsson, Regional Director at Wihlborgs.
Wihlborgs previously signed an agreement with the co-working company Mindpark to elevate the experience and service at Kvartetten by, for example, staffing the reception and assisting with arranging events.
About the certifications
- Sweden Green Building Council (SGBC) is a Swedish certification where only the most ambitious buildings meet gold level requirements when it comes to environmental performance and an excellent working environment. SGBC for new production comprises 15 compulsory indicators in the fields of energy, indoor environment and materials.
- Zero CO2 is an add-on certification to SGBC, BREEAM-SE, LEED and Swan that sets requirements for the reduction of the building’s GHG emissions by setting limits for GHG emissions for the production and processes of construction and indirectly by setting limits for the building’s energy consumption. Zero CO2 also sets requirements to ensure that the building’s remaining climate impact is balanced against climate measures for an overall climate impact that is net-zero.
- WELL is a US health certification that focuses on the areas that, according to research, have the greatest impact on our wellbeing, such as diet, mind, community, sound, light, air, water and movement.
