“rhubarb” Applauds Winterhalter Dish and Glasswashing at Royal Albert Hall
Machine plus water treatment plus chemicals plus service deliver “dramatic improvements”
Washing 5,000 glasses a night for some of the world’s most discerning people is no easy task. “The glassware has to be perfectly clean,” says Aaron Whitelock of “rhubarb”, the caterers at The Royal Albert Hall. To get those perfect results “rhubarb” specified a Winterhalter RoMatik reverse osmosis unit and a Winterhalter MTR multi tank conveyor warewasher. The system was supplied by Nelson Catering Equipment of London.
Aaron Whitelock is director of “rhubarb” at the Royal Albert Hall. “This is one of the world’s most iconic buildings and our guests expect the absolute best. We took over the catering in 2011 and carried out an extensive review of the equipment,” he says “The washroom is a key element of our operation and the old warewasher was not up to the task, so we looked for the best solution.
“Quality was the primary aim and, after careful consideration, we chose the Winterhalter system, in conjunction with their chemicals and service. That gives us a one-stop solution.”
Although the primary focus is glassware, the MTR is also used for crockery and utensils, on separate wash cycles, as occasion demands. “It does all the glasses for events as well as doing those used in the bars and boxes. It also cleans the crockery used at events and in the boxes.”
In order to achieve best results the MTR has a special switching device which alters the washing parameters, including chemicals and temperatures, to suit whichever type of ware is being processed. This makes it a multi-tasking option that suited the Royal Albert Hall’s requirements.
“The results have been very good indeed. Cleaning quality improved significantly with the introduction of the machine. In addition, the RoMatik reverse osmosis system is making a big impact – and it’s providing savings in terms of polishing. The system as a whole has dramatically improved our operational services.”
The RoMatik passes water though an ultra-fine membrane which removes nearly all the impurities and particles that cause cleaning problems. Winterhalter guarantees that glasses coming out of their machines coupled with a RoMatik RO system, and which are using Winterhalter glasswashing chemicals, will be so sparkling clean that they require no hand polishing.
“Winterhalter impressed on us the need to use the right chemicals to get the best results,” says Aaron Whitelock. “We trialled various options, benchmarking price and quality. On both fronts the Winterhalter products performed well, so we didn’t have to look elsewhere.
“Service support has been excellent, too. As with any new system, we had teething issues. The Winterhalter response was positive and strong.”

The Winterhalter MTR 3 is a 155 rack-an-hour conveyor system with pre-wash, wash and rinse zones. Features include a detergent saving device, which directs used rinse water into the pre-wash zone, reducing detergent consumption by 50%. A special feature was the chemical switchover option, which makes it a multi-function machine that allows staff to convert it from a glasswasher-specific to a dishwasher-specific system at the touch of a button.
The RoMatik 420 reverse osmosis model has a capacity of up to 420 litres per hour. As well as supplying water to the Winterhalter MTR 3 it also supplies it to a pass-through warewasher sited nearby. It removes up to 98% of particles from water and has a high yield of up to 80%, ensuring economic warewashing.
