Energy-saving dish and glasswashers are pushed to the limit at stylish boutique hotel

As you’d expect from an Ian Schrager hotel, The Edition is one of London’s most chic venues. In surroundings like this, the foodservice has a lot to live up to. “We have to make sure that the menu matches the surroundings – we’re about both style and substance,” says executive chef Phil Carmichael.

The hotel’s strikingly designed Berners Tavern is a Jason Atherton restaurant serving a modern British brasserie menu. “We take the best ingredients and then do as little as possible to them!” says Phil. “When we opened a lot of critics said ‘great rooms, bet the food can’t match it’. We’ve made it our mission to prove them wrong.”  

Creating a menu to match the style of the hotel added pressure in the kitchen, so the equipment was designed to minimise stress – that’s why they chose Winterhalter warewashers.

“There’s no point in serving the very best food if the plates and glasses aren’t spotless. We’ve used Winterhalter before and we know it’s the market leader, it has a great track record with us for utterly reliable results,” says Phil.  

Describing the compact MT rack machine in the kitchen as his workhorse, Phil says, “We push it to the limit, using it 20 plus hours at a time. It cleans all the dishes for breakfast, lunch, dinner, room service, staff dining, banquets and events…. even on a quiet day it’ll wash five or six thousand pieces, and they all come out spotlessly clean, ready to go.”

The Edition also has twelve UCM Energy glasswashers, connected to RoMatik reverse osmosis systems. “We take enormous pride in our stemware, there are six different wine glasses, all top of the range, and some are very delicate. The Winterhalters cope brilliantly – we can set the controls to delicate wash and the glasses come out sparkling.”

Edition Hotels has a strong green policy and energy saving is a key buying criteria. “Our engineers investigated the options. The energy and water saving capabilities of the Winterhalter machines made them an obvious choice,” says Phil.

Jayson Ball of Salix, which designed and installed the kitchens, agrees. “We looked at all the alternative makes and models and the Winterhalters really stood out, both for green and BREEAM, the environment assessment rating for buildings. Plus we were able to show the client a payback over the first three years. It was a no-brainer.

“Lots of projects call for more productivity out of smaller spaces. To achieve that we use a creative approach combined with the best third party equipment. Winterhalter has got both the cycle times and the footprint of their machines just right.

“The Winterhalter guys come and help us with the initial site survey. Once you get the dosing, water pressure and services right, there’s no better machine on the market.”

The MTR 2 at The Edition is a multi-tank warewasher that can process up to 188 racks per hour. It has a heat recovery system that reclaims energy from waste steam and vapour, using it to pre-heat the incoming cold supply.

The Edition has twelve UCM Energy under counter glasswashers. Each can process up to 48 racks per hour. The UC Energy is the only undercounter machine to feature a mini heat exchange recovery system, which extracts heat from vapour in the machine and uses it to pre-heat the incoming cold fill, reducing energy consumption. Almost no water vapour escapes from the machine when the door is opened. The UC’s VarioPower feature allows the user to adjust the power and pressure to take account of how delicate or dirty the glasses are.

With the RoMatik reverse osmosis (RO) system, water is passed though an ultra-fine membrane which removes nearly all the impurities and particles that cause cleaning problems, ensuring perfect glass and dish washing results, with no smears or odours. Traditional systems are large – often too large for the site. Winterhalter’s RO systems are as small as 469mm (h) x 142mm (w) x 515mm (d), so can easily fit beside or even on top of the warewasher. Yet even the smallest can process up to 90 litres of water per hour, removing 98% of particles. It combines all the benefits of a full-size system with low running costs and long service intervals.
