New easy-to-use, compact Alto-Shaam small cook and hold oven from FEM

Small footprint, big savings

Cook and hold ovens ensure that food can be cooked and then held at the optimum serving temperature, in a single unit, until required, a godsend in busy catering environments. Foodservice Equipment Marketing (FEM) has launched the new smaller version of the Alto-Shaam electric cook and hold oven (model 300-TH-III), a compact and efficient unit which is ideal for where space is at a premium.

The Alto-Shaam cook and hold oven can be used for cooking and holding a wide variety of meat, poultry and vegetables, as well as for braising, baking, proofing bread dough or reheating convenience food.

Measuring just 426 mm (w) x 643 mm (d) x 480mm (h), the new Alto-Shaam cook and hold oven has a capacity of up to 15kg, capable of holding three 1/1 Gastronorm pans. The oven cooks by time or by core temperature probe and automatically converts from cook mode to hold mode once the set parameters have been reached. When cooking by probe, the oven maintains a record of the highest and lowest temperatures to assure foods are cooked correctly.

The unit is easy to operate. Eight programmable menu buttons store the cook, hold, time and probe set-points of frequently used recipes, so all the user needs to do is simply load the oven, push the power button and the preset menu button, and start. The clear, easy-to-read LED display indicates the cook time remaining or the full range of programmed operating parameters.

If the oven door is opened, the innovative SureTemp™ heat recovery system immediately compensates for any heat loss, quickly returning the unit to the desired temperature. An audible reminder sounds if the door remains open for longer than three minutes.

The cook and hold oven uses a special Halo-Heat heating system, which surrounds the food with controlled, uniform heat to ensure gentle and even cooking and holding, without the risk of the food drying out or burning. This retains the food’s moisture and nutrients, increases product holding life and product consistency, and reduces shrinkage by up to 18 percent.

The oven can also be used for overnight cooking. Meat or other items can be prepared and loaded the night before and then cooked overnight to perfection, waiting ready for service the next day.

The unit is stackable to maximise space and is on casters for easy manoeuvrability. It has very low emissions and requires no external venting in most areas, which offers further savings on operating costs and space.

FEM supplies the new cook and hold oven with a full 12-months parts and labour warranty, with a lifetime warranty on cook and hold elements for the original purchaser. Accessories and other design options are available from FEM.
